Seven breakfasts without animal fats

Here you can be inspired by breakfasts for the whole week, which are also suitable for people with allergies or milk intolerance, as well as people with multiple sclerosis who have to exclude animal (saturated) fats completely from their diet. An exception is, for example, fish whose unsaturated fatty acids (omega-3) are beneficial.

Servings are created for 70 kg man, average energy value is 1930 kJ.

 

BREAKFASTS SUITABLE FOR PEOPLE WITH MULTIPLE SCLEROSIS:


BANANA-AVOCADO COCKTAIL

1 banana
1 avocado
2 dl of almond (vegetable) milk
30 g fine oatmeal
Energy value 1930 kJ

 

Procedure:
Mix everything.


BANANA PANCAKES
2 bananas
30 g vanilla instant pea powder (so-called hraška)
30 g fine oatmeal
frying oil
Energy value 1940 kJ

 

Procedure:
Crush the bananas, mix everything, ideally let the flakes swell for a while and fry on both sides.


RYE BREAD WITH SMOKED SALMON
2 slices of wholemeal rye bread
100 g smoked salmon
a handful of iceberg lettuce
a few drops of olive oil
Energy value 1940 kJ


MILLET PORRIDGE WITH APPLES AND NUTS
50 g millet (dry)
3.5 dl of almond (vegetable) milk
1 tablespoon honey
1 teaspoon cinnamon
1 apple
12 g of walnuts
Energy value 1920 kJ

 

Procedure:
First, pour over the millet with boiling water. Then cook in milk (about 25 min) until porridge is done. Season with honey, sprinkle with cinnamon, finely chopped or grated apples and crushed nuts.


WINTER SMOOTHIE
2 carrots
1 apple
1 pear
140 g pumpkin (preferably Hokkaido)
1 tablespoon cinnamon
1 teaspoon chia seeds
35 g amaranth flakes
Energy value 1928 kJ

 

Procedure:
Mix everything.


BEETROOT SALAD WITH PASTRY
1 large or 2 smaller boiled beetroots
1 big apple
1 bigger carrot
10 g chopped walnuts
1 - 2 tablespoons of lemon juice
1 teaspoon (linseed, grape, olive, ..) oil
3 knäckebrots or 1 larger slice of whole-grain bread
Energy value 1925 kJ

 

Procedure:
Grate everything on a coarse grater and mix with lemon juice and nuts. Serve with bread.


COUSCOUS WITH CRANBERRIES
75 g couscous (dry)
2 dl of almond (vegetable) milk
30 g cranberries
1 tablespoon honey
Energy value 1930 kJ

 

Procedure:
Put honey in a saucepan, heat up, add milk with couscous and cranberries and cook briefly. Leave covered for about three minutes.
